Hello Is there a way to see if tubers contain solanine in colorful potatoes? In white and yellow ones it's possible to see greening caused by light exposure. Are you sure that purple potatoes are healthy at all.Solanine is a dangerous toxin.

In Finland some of the old heirloom potatoes (white or yellow fleshed)are notorious for high glycoalkaloids. The flesh color being red or purplish blue has no direct correlation to higher alkaloids. It is easy enough to see greening on white and yellow potatoes and is easy enough with a trained eye to see greening on red or blue potatoes. In my opinion there is little or no risk in eating blue potatoes if they are not bitter.
Lots of research has been done on the anthocyanins to prove them safe.
