I grew Red Ox last year. I got a clone sent to me by Doug Strong. The plant grew not many tubers but 2 large, I roasted one potato and left one to grow this year. I took 4-5 pull sprouts from it. I cooked one in the jacket. It stays very much hard, and I fried shoe string and chips. I liked Red Ox as Chips!! I blanched the potato in vinegar and salt before frying~ Tom can you share the cross of Red Ox to keep notes? Is the most red Red I got...that is a mouthful~

I added Red Ox in my favorite list this year. I like the red color and taste is great as chips or shoestring fries. Next will be roasting this...
See it next to Azul Toro (I like Azul Toro best backed potato or boiled in the jacket nothing added)

For the record, Red Ox is a cross between NEGRO Y AZUL and BLUE OX. The latter one is the male parent and it was a cross between a red skin white flesh line and a blue skin blue flesh line, thus the red from a grandparent is showing up in the RED OX.
